當晚每道菜式都是別出心裁,充滿驚喜!最令人意想不到的便是阿拉斯加皇帝蟹的料理,竟然配上七層不同口感的食材, 再呷一口玉乃光純米大吟釀短稈渡船,令人回味無窮。 半辛口的玉乃光純米大吟釀短稈渡船,香氣優雅,口感順滑圓潤,與皇帝蟹十分相配。

This 5-course dishes were full of surprise, especially King Crab with seven layer dip & taro chip paired the sake Tamanohikari Junmai Daiginjo Tankan Wataribune.

This semi-dry sake gives an elegant aroma, smooth and round taste with a sharp finish which goes well with the King Crab dish.🍶 🦀🐟

清酒香氣最後一種是熟成香,多見於陳年老酒。經過長時間熟成,這些酒款擁有瞭如濃厚甘甜的蜂蜜﹑果乾香氣,以及丁香、肉桂等辛香料氣息,這些都是古酒的典型香氣。
【彩都 秘藏酒十二年貯藏】低溫貯藏12年,酒色呈琥珀色,散發如威士忌般的熟成香,淡淡焦糖味。 濃醇辛口,入口有杏仁味。

【SAKE 101】聞香識清酒 II
清酒香氣第二部分就是清酒發酵過程中產生的香氣。此香氣主要是來自於酵母吃掉糖分後,轉化成酒精時所產生的酯類化合物。酯類化合物在清酒來說主要分成兩大類,分別是乙酸異戊酯以及己酸乙酯。乙酸異戊酯呈現香蕉﹑哈密瓜的果實香氣;己酸乙酯則呈現蘋果,洋梨與鳳梨的香氣。這些香氣在吟釀酒中表現得最為典型,因此也被稱作為吟釀香。
【一酌一景 大吟釀】自古受惠於京都特有之伏水,酒質輕柔,飄逸著彷如白花,蘆薈般的清怡,後段回韻亦見米香旨醇雅潔的收結。

與葡萄酒一樣,清酒亦有相當豐富的香氣,但要注意的是,不同於葡萄酒聞香前要晃杯,清酒聞香識不需要劇烈搖晃杯子的,只需靜靜聞香即可。
清酒香氣可以從原料香,吟釀香(發酵過程中產生的香氣)及熟成香三個方面入手。
大多數清酒都會擁有米的飽滿香氣,這是原料本身含有的香氣。精米步合越高,米的香氣就越高,在純米酒中表現尤為明顯。大家不妨試下以下純米酒感受下啦!
【作 Impression G 純米原酒】採用協會7號的酵母釀造,帶有華麗香氣,口感清爽怡人,後勁並帶有旨味、米香、豆香

【SAKE 101】一切從觀色開始
品清酒,首先要從觀察顏色開始。市面上大部分清酒都是透明澄澈的,但都有特例。
⠀
經粗略過濾的濁酒,及完全未經過濾的無濾過生原酒,酒色會渾濁如乳白色。而長期成熟的清酒和古酒,也會染上歲月 的色彩,呈金色至深琥珀色。

如果手中的清酒並非以上品類,而色澤又非透明,咁就要小心它的品質啦。

【天の戸  純米大吟醸生酒 45】秋田地酒,有較為濃郁的熟菠蘿味及杏脯香氣,入口微甘,收結中等,略辛。
【恵信  五百万石純米大吟醸無濾過】以新潟産「五百萬石」為原料,用自家製天然乳酸菌發酵釀製,散發柔和高貴的香氣,入口旨味(umami)與酸味平衡,餘韻悠長。

【春日飲生酒,莫負好時光】🍶🌱

人生快意不過賞花飲酒,時值春分,不如來一杯生酒助興!
⠀
一般日本酒的釀造過程中,需要兩次的加熱處理,這個處理方式我們稱為『火入れ』。未進行任何的加熱處理的日本酒,我們稱為『生酒』,生酒是擁有最新鮮口感的日本酒。由於未經消毒,生酒的酵母仍然非常活躍,所以散發出濃郁的果香,甘甜易入口。

日本盛純米大吟釀生酒,濃厚米香伴著清新果香,雖然係生酒,未開封的情況下能在常溫下保存8個月!開了封就要儘快享用啦。

梅乃宿純米大吟釀 吟・生酒,是用磨至50%的山田錦釀成,不經高溫處理直接入瓶的季節限定品。一斟入杯已酒香撲鼻,入口清爽甘甜。

Happiness is appreciating flowers while drinking! Why not cheers for spingtime with a glass of Namazake.
⠀
Generally, sake has to be heated twice for the purpose of pasteurization, which we call it "Hiire". Japanese wine without any heating, we call it "Namazake", meaning"raw wine" in Japanese. It gives a fresh taste and fruity fragrance since the yeast is still very active.
⠀
Nihonsakari Junmai Daiginjo Namazake, has a thick rice taste with fresh fruit fragrance. Although it is namazake, it still can be preserved under normal temperature for 8 months!

Umenoyado Junmai Daiginjo Gin Nama is a seasonal limited product made of Yamadanishiki. When poured into the cup, the refreshing fregrance comes out immediately.

【來自河童王國的清酒】 ⠀ 日本文化 【來自河童王國的清酒】

日本文化中,妖怪文化亦是一個有趣的部分。
⠀
其中河童應該是最廣為人知的妖怪,而九州算得上是河童王國!佐賀更有日本唯一祭祀河童的神社。今次介紹的两支酒就來自這裡。

佐賀的百年酒造 松浦一酒造內供奉著河童木乃伊作為守護神,並自稱「河童酒造」。這支來自「河童酒造」的大吟釀入口爽快順滑,酒身有白桃和香蕉香味,餘韻帶點辛味。

天吹酒造已有320年的歷史,有別於其他,他們使用花酵母釀造出各款個性鮮明豐富的佳釀。天吹純米吟釀生 (草莓花酵母) 擁有非常結實飽滿的熟成哈密瓜味,香氣豐盈但入口清爽,適合慢慢品飲、感受香氣變化。

【Sake from Kappa Kingdom】

In Japanese culture, Yokai (meaning “supernatural monsters” in English) is an interesting part.
⠀
Among all the Yokai, Kappa is the most famous one. Kyushu region is regarded as Kappa Kingdom because there are many spots about Kappa. And there is one and only shrine for Kappa in Saga Prefecture. ⠀
The two sake we would like to introduced are coming from here.
⠀
Matsuuraichi Daiginjo: refreshing and smooth at the first taste, fruity note with peach and banana aroma, intense finishing. What’s interesting is that they also worshiping Kappa inside the brewery. ⠀
Amabuki Junmai Ginjo Nama (Strawberry flower yeast): Intense pre-mature pineapple note, rich aroma but refreshing taste. Amabuki Shuzo has been producing sake for 300 years. They are using flower yeast to produce good sakes. ⠀

呢支 菊咲 28,就係運用咗釀造葡萄酒嘅概念,釀酒師Kazuki Usui曾經係一名侍酒師,因此釀造清酒時都應用咗自身積累嘅葡萄酒知識,佢相信清酒都一樣可以展現風土。

另一支喺今屆Miss SAKE Hong Kong決賽介紹到嘅就係 東一 山田錦 吟醸酒,有相當突出嘅酸度,以及柔滑嘅口感。

【Even Sake Can Express Terrior?】🌾🍶
⠀
It’s common that we think of the word “terrior” when we talk about wine. But how do sake express terrior?
⠀
This Kikusaki 28 is a modern twist to traditional sake. Sake brewer Kazuki Usui, a former wine sommelier, is applying his wine knowledge to refine the sake style. He believes that sake can express terrior like wine does. ⠀
As for the other sake we would like to introduce, Azumaichi Yamadanishiki Ginjo, is the sake with unique style. It has aggresive acidity and smooth texture. ⠀
